Mid-yellow, bright colour. Very complex bouquet loaded with bready, toasty characters, showing character from extended time on lees. Background of dried fruits and flowers. The palate is savoury, mellow and the finish is crisp and lip-smacking dry. It has a lot of toastiness for an NV blanc de blancs, due largely to long ageing. Excellent wine. (7-8 years on lees; 5-6 grams/litre dosage; 20-30% non-malolactic)
