A prestigious Champagne from Collet, the Vintage 2008 is a blend of 66% Chardonnay and 34% Pinot Noir, aged for over eight years to develop rich complexity. It showcases bright lemon and quince aromas with hints of brioche and acacia, while the palate is fresh with crisp citrus and mineral notes. A refined Champagne perfect for high-end venues, ideal for pairing with veal tenderloin or roasted quail, making it an elegant choice for special occasions and discerning guests.

Aroma

Pastry universe embodied by notes of caramelized and grilled hazelnut and almond, fresh butter, with notes of fruits like apple and quince. When aerated it evolves towards aromas of bergamot, linden, candied lemon, blackcurrant, raspberry, with hints of toast.

Palate

Frank and fresh with a creamy and melted effervescence. Pulpy and coated fruity matter sustained by an acidity reminding those of lemon. The fi nish reveals concentrated and savoury matter, raised by liquorice and toasted bread aromas.

The colour is medium to full yellow with a golden tinge. The bouquet is very mellow and complex, loaded with toasty/bready aromas, and some nutty aldehydes, while the palate is full and rich, ample and rounded, generous and satisfyingly proportioned. The balance of acidity and sweetness with the flavour is outstanding and the harmony of the finish is lovely, leaving a long, clean aftertaste. There's a distinctive juiciness in the mid-palate. This is forward for an '08 but it's a lovely drink. (50% pinot noir, 40% chardonnay, 10% meunier; dosage 7 grams/litre)

All delivered sotto voce and with freshness, a citrus whiff always not far behind. Rather attractive and showing all the forceful swell on the palate of the very superior 2008 vintage. Showing convincing pungency and length, with a velvetine texture showing early on the palate. Finishes quite long with cream and notes of cooked berries and toffee crisp with a salty sprinkle. This seems a little unresolved, yet youthful and with no doubt much more to come. Eight years on lees.
